Two Healthy and Delicious Fall Recipes for Breakfast


 Halloween is over and we are in a sugar coma over here. I may have overestimated how many trick or treaters we were going to get and as a result purchased way too much candy. Do you know what is a great way to pass the time while waiting for non existent trick or treaters? Eating candy.

Luckily this morning I woke up with a couple delicious and healthy options for breakfast in my fridge and freezer. They are both warm, hearty and filling which is exactly what I crave on chilly mornings. Both recipes are also naturally sweetened so they are perfect for mornings when you've indulged a little too much the evening before.

 Pumpkin Muffins


 These muffins by Cookie and Kate are both healthy and delicious. I made a few substitutions to the recipe which worked out well. We never have eggs in our fridge so I made two flax eggs instead and I also used Spelt Flour because that's what I had on hand. In half of the muffins I put a few dark chocolate chips and in the other half I sprinkled pumpkin seeds on top. Both were yummy. These would also make a great snack or, with a few extra chocolate chunks, a sweet treat!

Heavenly Carrot Cake Baked Oatmeal


You will start noticing that a lot of the recipes I make on repeat are from the Oh She Glows website, app or cookbook. I'm just such a fan. Buying ingredients for a new recipe isn't always cheap so I love knowing that there is a high chance I will like how an Oh She Glows recipe will turn out. This is the second time I've made this Carrot Cake Baked Oatmeal and it was just as delicious as I remembered. So easy to make and the perfect quick breakfast once it's made and in the fridge. I love adding extra raisins to mine and for a little crunch I also topped it with pumpkin seeds. I have a nut allergy so I couldn't add the walnuts that were suggested. I also used regular milk because it's what we had on hand. I also cut the recipe in half so if you make the full recipe you'll use a bigger baking dish.

I love to drizzle a little bit of pure maple syrup on it before eating.

I really need to back away from the refined sugar soon because I think I am legitimately addicted. All I crave are sweets right now and my will power (which comes and goes) has been officially on vacay since Thomas' arrival. Actually, since I got pregnant... Oops. I've cut sugar completely out of my diet before but I'm trying to stop the "all or nothing" approach. I'm fairly convinced that when I do attempt to really lower the amount of refined sugar in my diet I will suffer from legitimate withdrawls so I'm trying to use more naturally sweetened dishes to trick my body.
